On the Fifth Day of Christmas I search through my cookbooks for appetizer recipes… the easier the better. What I love about this one is that it’s a no cook and can be prepared a day before.

INGREDIENTS:

Cherry tomatoes.

Chicken salad. (You can make your own or I buy mine already made from a local meat and three restaurant. You can also use tuna salad.)

Slice about 1/8 inch of the tomato off top end. Scoop out the meat of the tomato. Fill with chicken salad. Garnish with either, green bell pepper slivers, bean sprouts or a small piece of fresh avocado. If you use the avocado put it on a few minutes before serving.
